What Are You Baking Wednesday?
Christmas is creeping towards us. We are all shopping, baking, partying and visiting people we love. I recently started following a blog that posts recipes everyday. Some times twice a day. And they all look delicious and probably more points than I'm allowed on my weight watchers points plus plan.
A favorite recipe of the young family are chocolate Scotcheroos. Not really sure how it is spelled but it is really a delicious rice krispies treat. This recipe comes from a good friend of mine.
There is something to be said for the exchange of cards with recipes on them. Now I know organization wise it is not really efficient. But I ran across recipes from loved one who have passed away and it brought back so many memories.
Christmas traditional recipes:
Chocolate Scotcheroos 1 cup sugar
1 cup light corn syrup 1 cup peanut butter
6 cups rice krispies 6 oz chocolate chops & butterscotch chips
Combine sugar and syrup in 3 qt. saucepan. Cook over moderate heat. Stir frequently. AT FIRST SIGN of bubbles remove from heat and add peanut butter. Stir then add rice krispies stir well. Press into buttered 9 X 13 pan. Melt chips together (I use microwave safe pyres) 1 minute-stir-1min until smooth. Then spread over krispies. Let set
ENJOY!

I used to bake--then went through several years of not eating desserts. Now my younger son will buy cookie dough or cinnamon rolls and bake them. As for me, I wouldn't want the local bakeries to go out of business so I visit them when I want a sweet treat!
